RECIPE: Ham for the Holidays (Chef Gabriel Lewis)

A true holiday staple, ham is generally on the dinner table for Thanksgiving and Christmas. This version uses the bourbon to mimic the “Gold Rush” cocktail as the glaze. Sweet, salty, smoky and overall delicious!
(Serves 5-8)
Ingredients:
- 10 lb Smoked Ham
- 4 oz Bourbon
- 4 oz Granulated Sugar
- 4 oz Unsalted Butter
- 1 Large Lemon (Juiced and zested)
- 4 oz Honey
Preparation:
- Preheat the oven to 350 degrees Fahrenheit.
- In a medium sauce pot over medium heat, combine the bourbon, butter, sage, lemon zest and lemon juice. Whisk together the ingredients and cook until it thickens and set it aside.
- Using a sharp knife, score the ham in a diamond pattern and place it in the oven for 45 minutes to 1 hour, then lower to 325 degrees Fahrenheit for another 45 minutes to 1 hour.
- Remove the ham from the oven and apply the glaze to the ham. Place back into the oven for another 20 minutes then remove and glaze again. Continue for another 2-3 glazes and remove the ham from the oven for a final time once the internal temperature of the ham reaches 140 degrees Fahrenheit.
- Let the ham rest for 15 – 20 minutes and slice.
- Serve with the remaining glaze, pan drippings, and your sides.
